Cooking
We need a white round grain rice "Kuban" from the Mistral (that this rice is suitable for this dish is because it contains a lot of starch), ripe, but firm to the touch tomatoes, mozzarella cheese, (I love this snack to use mozzarella with Basil), and pesto.
Boil some rice "Kuban" from the Mistral in salted water, allow to cool a little, add 1 tbsp. a spoonful of pesto, mix well.
With your hands roll balls of rice and crush them from two sides. Cut tomatoes and mozzarella slices.
Spread on rice meatballs a slice of tomato, slice of mozzarella, top with a little pesto. You can sprinkle dried Italian herbs mix or garnish with Basil leaves.
