Eggplant baked with rice, chicken and mushrooms
A fun and simple recipe for a delicious dinner or a light lunch. Help yourself!

Ingredients

  • Eggplant

    1 piece

  • Wild rice

    4 Tbsp

  • Mushrooms

    100 g

  • Cream

    0.5 cup

  • Chicken egg

    1 piece

  • Vegetable oil

    3 Tbsp

  • Onion

    1 piece

  • Chicken fillet

    150 g

  • Salt

  • Allspice

Cooking

Eggplant wash, cut in half lengthwise and carefully remove the pulp, keeping a thin layer. Halves salt and leave for 20-30 minutes. The eggplant pulp finely chop.

Boiled slice the mushrooms and fry with onions.

Chicken fillet cut into small pieces and fry until cooked. Put in separate bowl.

In the same pan fry the chopped flesh of the eggplant.

In a bowl mix the fried eggplants, rice, mushrooms and chicken. To taste sprinkle with salt and pepper.

Whisk cream with egg.

Halves eggplant dried with a cloth, put in a refractory form and fill with stuffing. On top pour the beaten egg sauce. Put in oven at 190 deg. minutes 25-30. When baking, you can first cover with a foil, at the end of cooking to clean up, to brown.

Our dinner is ready. Serve with greens.
