Cooking
Prepare cake: beat 6 egg yolks with sugar until white foaming cream, then add the sifted flour, raisins. Whisk the egg whites for 5 minutes, gradually increasing the speed. Carefully add foam to the cream and gently stir. Vystelim a baking tray with baking paper and pour it into biscuit dough. Bake in the oven at 200 degrees for 15-20 min.
Prepare the cream: whisk 3 egg yolks with sugar, add sifted corn starch and warm milk, pouring it in a thin stream, whisking constantly to avoid lumps. Squeeze the juice of three oranges (I got ~250 ml), grate the zest and add to the mixture.
Cook the mixture over low heat, stirring constantly. When the cream starts to boil, pour it into a wide glass bowl and close the film for food. Allow to cool.
Orange pour boiling water carefully wash, dry and cut into thin slices. Boil the syrup 200 ml water and sugar. Place slices and boil for 2-3 min.
Cut the cake into 3 layers. The first place them on a dish, to impregnate with a syrup, which was cooked oranges, liberally lubricated cream. To close the second cake layer, spread the cream. Third Korzh spread, soak up the cream and put the dessert in the fridge.
Before serving, decorate the dessert with oranges and mint. Bon appetit!
