Potato-cheese quiche with eggplant, bell peppers and tomatoes
A delicious vegetable pie!!!

Ingredients

  • Potatoes

    6 piece

  • Cheese

    300 g

  • Eggplant

    1 piece

  • Onion

    1 piece

  • Garlic

    1 tooth

  • Pepper

    1 piece

  • Chicken egg

    2 piece

  • Sour cream

    2 Tbsp

  • Olive oil

    2 Tbsp

  • Tomato

    5 piece

  • Cheese

  • Spices

  • Greens

  • Bread crumbs

  • Basil

  • Lettuce

Cooking

Peel and boil the potatoes.

Eggplant slice, prisolit when let the juice out, rinsed with running water.

Finely chop the garlic, onion slice and fry in a little olive oil, add the rinsed eggplant and simmer until tender on low heat, the OIL is NO MORE to ADD!

Potatoes are ready to mash, add cheese, mash them together (ratio of mashed potatoes/cheese= 1/1).

To the resulting mass add egg, dry herbs, salt and pepper, mix well.

To the eggplant add the diced bell pepper, mix well.

Remove from heat, add chopped fresh herbs, mix well.

Small tomatoes cut in half and remove the seeds.

Form for baking grease with oil, and liberally sprinkle with breadcrumbs or semolina, put there spoon the potato mixture to form a skirting, put the vegetables on top.

In a separate bowl mix the sour cream and egg, add salt, mix well.

Pour the oil mixture over vegetables, sprinkle half of the tomatoes, each put on a small piece of cheese.

Cook in oven on medium heat until Browning.

When serving, garnish with fresh Basil and arugula. BON APPETIT!!! PS Last time made form with an oiled parchment, and all stuck : - (so, don'T DO that!!! To cut better SLIGHTLY cooled.
