It's very simple: wash herring, NOT DEFROSTING AND NOT CLEANING, put in a jar, fill the salt and sugar, Bay leaf and pepper, fill with COLD WATER, shake the jar several times. ALL! I started tasting after 2 hours, no longer have the patience.
I was lucky, the fish were sold without head and cleaned. But the recipe is so good that to defrost and clean a fish or not (only talking about the herring, another fish is salted differently, without brine. There is already a similar recipes for other fish). The calculation of salt and sugar given 1 liter of water.
