Protein one egg whisk in a solid foam with a pinch of salt and refrigerate.
Separately, mix sugar, egg+yolk, vanilla and flour. I use unrefined cane sugar "Demerara" TM "Mistral". It lends baked goods an incredible caramel flavor, color and aroma.
