Eggplant sandwiches
Tasty, spicy appetizer. Seen a somewhat similar recipe, but not much not like that. That's a lot of years my mother. Delicious recipe of the Azerbaijani cuisine.

Ingredients

  • Eggplant

    3 piece

  • Tomato

    4 piece

  • Garlic

    2 tooth

  • Salt

    2 g

  • Mayonnaise

    3 Tbsp

Cooking

Eggplant cut into not thick slices, fill with salt, fill with water and leave for 30 minutes to left bitterness.

Then drain off the water and fry in vegetable oil on both sides to obtain a brown crust,add salt.

When all the eggplant fried,cut into rings tomatoes and just roast it on both sides.

Roasted tomato spread on eggplant(eggplant ring,a ring of tomato)

Press out the garlic and put in the center of each sandwich.Infuse 2 hour or so(if not patient possible). If the tomatoes are not enough, then I prevent a mayonnaise with garlic and oil eggplant( this is a completely different taste).Delicious just disappear from the plates at one point!
