Pumpkin stew with lentils in the Caribbean
Tender, spicy stew of pumpkin and lentils. Can be prepared as a separate dish and can be served as a side dish. Prepared pretty quickly and turns out very tasty dish. Venture to expose it to the contest "Fast from Moulinex".

Ingredients

  • Pumpkin

    450 g

  • Vegetable oil

    2 Tbsp

  • Onion

    1 piece

  • Garlic

    4 tooth

  • Curry

    2 Tbsp

  • Chili

    1 piece

  • Thyme

  • Lentils

    1 can

  • Broth

    400 ml

  • Green onions

  • Cilantro

  • Lime

    0.5 piece

Cooking

Pumpkin cut into cubes.

Onions chop and fry in vegetable oil for 5 minutes.

Add the garlic and curry powder, sauté 30 seconds, stirring constantly.

Pour in the vegetable broth or water, add thyme, crushed chillies (removing seeds). Season with salt to taste. Bring to boil, reduce heat and simmer for 15 minutes.

After 15 minutes add the lentils, drain liquid. Simmer for another 5-7 minutes.

At the end of cooking add the chopped green onion and cilantro, the juice of half a lime (or 1/3) of the lemon. Stew for another 2 minutes and serve.
