Burgers
Fans of squid and fish dedicated! Recipe borrowed from one of the sites of the city Petropavlovsk-Kamchatsky. (How I got there... I don't know.. as always, wandered over the network... ). Well. There was a small article about the commendable chefs of one of the kindergartens of this city, and in the end was given a couple of recipes from the menu of the kindergarten. I thought, "What tasty cakes and soups to feed the far Eastern kids.." (Soup then I also try to do, if you like-lay, he is also a marine). And cakes decided to implement as soon as possible, as according to the chefs they are very gentle, soft, juicy... (and they are not deceived). Anyway, went to buy squid and fish and started cooking...

Cooking

step-0
Take the squid and Alaska Pollock fillets. The recipe was written to take the weight equally, but I soul calamari, squid put a little more in the end, the burgers were more calamari than fish taste, with a light note of fish. In General, what's your point-you can vary the tastes, put equally a little more,or little more than that,in its sole discretion. Ideally ,again, were equally. The ingredients quantities for more Kilmarnock taste. ....Squid clean from the skin.
step-1
cut squid, fish before sending to the meat grinder, there's a bulb gone.
step-2
in the received forcemeat add the egg, salt, soaked in water bread. Beat. Honestly I'm not whipped. My mixer broke.
step-3
molding the meatballs. and coat in breadcrumbs.
step-4
until was formed, the oil in the pan gets hot. lay the meatballs gently(very gentle!) in the pan with heated oil. they seize, and for them not so scary...fry on both sides until zolotisty. starting to SMELL like GRILLED SQUID AND GRILLED FISH.
step-5
now the sauce. flour fry in a dry frying pan until pale cream color,RUB with butter and stirring constantly to combine with the hot milk. (The sauce turned out too thick,I think that it needs to be more liquid,so milk take more than I took, and I took half a Cup...just the sauce in the recipe was very vague described and it is unclear how much to take). as connected with milk,to enter the grated cheese, salt and a little sliced parsley. cook the sauce for 7 minutes, stirring constantly, over low heat.
step-6
pour the sauce over the meatballs .(I did not fill-but almost smear...) .and put in the oven for 7 minutes at a temperature of 250 g.
step-7
well these cakes turned out. serve with any side dish. pleasant to the taste,as promised by the chef-tender,juicy. Child yet roasted ran to the kitchen and started to ask what that smell is,look into the pan and ask to eat it. I myself have added the third piece of the night, cold is good too.no unpleasant cold fat, like from meat patties. in General,Bon appetit to all!
