A few days ago from one cooking site took the recipe of potato bread with caraway seeds, then baked it. He had such a fragrant, soft, tasty, porous, beautiful, we dealt with it in two days!!!! So I decided to share with you my recipe. However, due to my lack of serum, laid down in the recipe, I had to resort to the replacement, but I think that this replacement did not affect the taste and quality of bread. The cooking process is time consuming, as with any yeast baking, but I'm sure the result will not disappoint you, like I, will enjoy his work and please his family!! In the recipe I write that the bread does not get stale for a long time. We have it become stale simply do not have time ate in two days, and already I baked a new batch.

Put to boil the potatoes and while it is cooking, sift flour through a fine sieve to aerate and enrich it with oxygen.
If you don't have serum, prepare a mixture of yogurt and water (and you can use the broth of the potatoes). Take 1/2 Cup of yogurt 1,5% fat and 3/4 Cup of water and stir thoroughly, until a homogeneous mass. Prepare the sourdough: yeast pour 1/4 Cup of the warm mixture and leave on for 5 minutes.
Yeast stir, add the remaining mixture, a Cup flour and leave for half an hour to ferment.
During this time the potatoes are cooked, we prepare a puree. Add mashed potatoes to the rescue in the yeast mixture and there - salt and cumin, mix well and add the remaining flour.
All knead well in the bowl first, and as forming the dough, spread it on the table, well floured, and keep knead, adding the flour and wetting the hands with vegetable oil, as long as it is smooth, soft, elastic, not tight. I have the dough all the time after my hands, and I wetted them slightly with vegetable oil. When I baked for the first time, I thought that violated proportion, so it's sticky, but the second time, the same thing.
Put the dough back into the bowl, well greased with vegetable oil, cover it with a cloth and leave in a warm place for 1.5-2 hours to rise. The risen dough again, knead well, put on baking tray, sprinkle with flour, or in a form (I have silicone) and leave for half an hour to rest.
Carefully with a knife make incisions on top with optional sour cream (I have not oiled) and place in a preheated 200 degree oven for 45 min.
After half an hour in the apartment will go a mesmerizing smell and you with impatience wait, when it can be removed!! And now time is coming you get the form from the oven, allow the bread to cool, removed from the mold, cut off with pleasure a piece of soft, fragrant, delicious, fresh bread! Smear it with a little melted butter, jam, preserves, or even just take a piece and eat with relish, washed down with milk or tea!! Bon appétit!!!
