Stuffed eggplant
Stuffed eggplant is a dish almost perfect. It is cooked quickly with vegetables, which pleases us the summer is eggplant, bell pepper, tomatoes, onion and herbs. And, of course, it was very tasty. So I recommend you to adopt this recipe.

Ingredients

  • Eggplant

  • Pepper

  • Tomato

  • Minced meat

  • Tomato paste

    1 Tbsp

  • Vegetable oil

  • Butter

  • Black pepper

Peel the onion, eggplant and pepper my.

Peel the eggplants so that they were striped as pictured. Pour in a bowl of water, dissolve it in salt and put the eggplant for 5 minutes so that they become salted.

Fry the pepper and the eggplant whole until soft.

In another pan fry the finely chopped onion and ground beef. Fry on medium heat for 15 minutes, then sprinkle with salt and pepper to taste.

The second onion finely chop and fry in butter until transparent. Then add to sauteed onions peeled chopped tomatoes and tomato paste.

Simmer the onion with the tomatoes and tomato paste for 3 minutes, stir, add salt and herbs to taste. Remove from the heat.

Fried eggplant cut lengthwise, making a pocket.

Stuff eggplants with minced meat, fried with onions. Lay the eggplant in a baking dish, put there the roasted peppers.

Fill the eggplant with peppers onions stewed with tomatoes and tomato paste, sprinkle with herbs and in the oven. Bake 20 minutes at 180 degrees.
