Casserole of beef, eggplant, tomatoes and potatoes
Very tender and tasty casserole of beef, eggplant, potatoes and tomatoes with a cheesy crust.

Ingredients

  • Minced meat

    300 g

  • Eggplant

    1 piece

  • Onion

    1 piece

  • Tomato

    8 piece

  • Potatoes

    2 piece

  • Cheese

    150 g

  • Mayonnaise

    4 Tbsp

  • Garlic

    2 tooth

  • Sunflower oil

  • Basil

  • Salt

Eggplant cut into slices, soak in salt for 20-30 minutes. Fry in a skillet in a small amount of sunflower oil.

Fry the mince with onion (half of an onion) until tender, season with salt and pepper.

Put half of the eggplants in a baking dish.

Sprinkle half of the minced meat.

Then put half of the tomatoes and chopped onion and garlic. Sprinkle with Basil, salt and pepper to taste.

Grate on a coarse grater potatoes and half of the spread layer.

Repeat the layers. Eggplant, ground beef, tomatoes, onions and garlic. Sprinkle with Basil, salt and pepper to taste.

To grate cheese and spread layer.

Over the cheese put a layer of mayonnaise. Bake in preheated oven for 30 minutes. The first 15 minutes under the foil (like a lid), then remove foil.
