Description
The original recipe was beef and was called "cowboy Breakfast". But I wanted something gentle. It turned out just AMAZING taste and tenderness of the chicken, which was eaten in one sitting and immediately ordered another one the next day.

Cooking
The carcass wash, remove any remains of feathers. Pick the pieces of fat.
Bacon cut into thin slices.
Doing it under chicken skin incisions, slightly goes under the meat, and lay them in slices of bacon. Inside and outside we coat chicken in a small amount of coarse salt.
Take a handful of currants and the pieces of chicken fat. Currants put inside the carcass. And the fat spread in a baking dish and pour a thin layer of water.
Take currant jam or currant, mashed with sugar.
Coat the chicken with currant jam m spread in a baking dish.
On top sprinkle ground pepper. Cover with a lid and bake in the oven at 200 degrees for about an hour, then another 15 minutes with the lid open until Golden brown. If you decide to bake the chicken in the sleeve, the cooking time need to reduce for 10 minutes.
Put the finished chicken on a plate. Pour the resulting juice. The taste and the aroma is simply mouthwatering. Very interesting flavor combination of chicken, sweet currant crust and tart currant on the inside. And yet, it turns out that bacon, baked with currant jam, this is SO good! :-) :-) :-)
