Cooking
To prepare sugar syrup: in a saucepan melt the sugar in the water.
Egg yolks beat with a mixer, still whisking pour a thin stream of the sugar syrup, whisk until the weight increase in volume.
Chocolate to melt, add the yolks, beat until smooth, cool.
In cold cream to pour passion fruit syrup ( or add the pulp).
Whip the cream until stiff peaks.
Cream added to the chocolate mass, whisk until smooth. Ready mousse pour in a portion kremanku, remove in the freezer for 2-2. 5 hours. The mousse needs to set, but not freeze completely.
Ready cream mousse garnish with Mandarin slices.
