Girls decided to cook one of the most difficult desserts of French cuisine. The highlight of this dessert is that it contains a liquid filling. The first time you may fail, but the dessert will still be very interesting to taste. To start, melt the chocolate with butter in a water bath (fire in a large tank, because then it to mix other ingredients).
While melted chocolate with butter, whisk the eggs with the sugar with a whisk. Whisking manually until the sugar is dissolved. Another such moment: if you chocolate is not bitter, reduce the amount of sugar. It is advisable to take this natural black chocolate with a cocoa content of at least 70 %, because the dessert turns out so sweet.
Mix the eggs with the sugar. When the chocolate and butter melt, allow it to cool to body temperature (30 - 36°C).
Once the chocolate has cooled, add the egg mixture and stir.
Then add the flour in several approaches. Peremeshivaem gently from the bottom up.
The consistency should resemble a thick homemade sour cream.
Grease muffin tins softened butter.
Then sprinkle the ramekins with cocoa. I recommend it cocoa, not flour, because using flour, the muffins will be pale, and cocoa - deep brown, as it should be.
Poured into our molds chocolate and put in a preheated 180°C oven for 8-10 minutes. VERY IMPORTANT not to overdo the cupcakes in the oven, otherwise there will be no liquid filling.
Get the cupcakes. Allow to stand for 3-5 minutes. They are easily removed from the molds, I got out a shovel.
Here's a dessert we've turned out. I was making fondant for the first time, afraid that will not work... but it's a miracle! And fluid was filling, and the cupcake is amazing! Family loved it, asking for more. I was decorated with cherries. Traditionally, fondano add a scoop of ice cream, mint leaves, raspberries and any other berries.
