Cooking
Preheat the oven to 190°C. In a bowl, mix together the flour, baking powder, salt, and 0.5 tsp of cinnamon. With a mixer beat eggs in large bowl. Add the olive oil (I added in 3 divided doses, should get an emulsion similar to mayonnaise), essence, 1 Cup sugar, continuing to beat on medium speed. Pour into the bowl with the eggs and dry mixture, stir on low speed, then add nuts and chocolate "drops". You should get an elastic dough
On a flat plate, combine remaining sugar and cinnamon. Divide the dough into 5 parts and roll out them bars. Roll them in cinnamon mixture and place on a silicone Mat at a small distance from each other. Bake in the oven for 15 minutes.
Remove, let cool on baking sheets 10 minutes, then slide onto a rack and allow to stand for 10 minutes.
Cut bars diagonally into slices 2 cm thick, place them on a baking dish and bake in the oven for 12-15 minutes at 170°C.
