This is a recipe from the book Ramsay's "World kitchen". I looked at him for a long time, but only Vinsanto from us in the afternoon with fire not to find, but this wine is the visiting card of Greece, where I safely arrived. If you also have a problem with Vinsanto, then you can take Amaretto, you get a great dish.
Prepare the sauce - 100g. brown sugar and 3 tablespoons of water, bring to a boil, reduce heat and cook until the sugar is dissolved.
Vanilla pod cut lengthwise and scrape seeds into sugar.
Remove the pan from the heat, add the butter and Monsanto. Back on the stove and will simmer until the sauce thickens, it should be the consistency of syrup.
Cut peaches into quarters, it is better to take dense fruit, they retain their shape when cooked.
Lower the peaches into the syrup and cook them for 4-5 minutes.
