Eggplant with fresh herbs
In Georgian cuisine eggplant is a special place, and cooking methods are not considered. The recipe that I offer you, requires no extra costs - neither the time nor the products, and the result is just wonderful!

Ingredients

  • Salt

  • Black pepper

  • Garlic

    4 tooth

  • Vinegar

    2 Tbsp

  • Basil

    0.5 coup

  • Khmeli-suneli

    0.5 tsp

  • Cilantro

    1 coup

  • Vegetable oil

  • Pepper

    1 piece

  • Onion

    1 piece

  • Eggplant

    1 kg

Cooking

Onion cut into half rings, pepper strips and fry until soft.

Combine onions and peppers with chopped cilantro, Basil, garlic. Salt, pepper and add vinegar and Khmeli-suneli (by choice or opportunity). Leave to infuse. Since eggplants will be fried without salt, this mixture should be slightly salty.

Of the eggplant with the two sides cut away the peel and cut it into thin slices.

Fry on both sides.

In a suitable container put a layer of eggplants with a mixture of onions and herbs, spread on top the next layer, again lubricated and so to the end.

All these manipulations are performed with not yet cooled eggplant. Delicious in hot or cold, but cold is still better, so let them steep.
