Cooking
First, prepare the risotto. Here are the products we need. Mushrooms and onion cut into cubes, thyme, finely chopped, Parmesan cheese, chop almost to a powder. Vegetable broth bring to a boil and keep hot.
Butter and olive oil melt in a deep frying pan. Add the onion and fry gently for 1 minute.
Add the mushrooms and cook for approximately 8 minutes. The mushrooms should give juice.
Now put the rice and cherries and mix well.
Gradually pour the broth, portions. Cook, stirring occasionally. When the rice is ready, add thyme and cheese and mix well. Here's our risotto is ready. For further use it is necessary to let it cool down.
Mozzarella cheese cut into cubes.
From the cooled risotto makes the balls. I got 20.
Finger do in the center of the ball recess and put a slice of mozzarella.
And back roll giving an oval shape. Mozzarella should be inside.
Then roll in the breadcrumbs.
Vegetable oil pour in a deep pan and heat to a temperature of 350F (175С).
Immerse 4-5 balls into the oil and, stirring occasionally, fry until Golden brown.
Ready balls are put on paper towel to drained excess oil. And so with all the balls.
