Take the meat (preferably bone-in), wash, dry. In a saucepan, pour 500 ml of water and put on fire. Add salt, vinegar, chili pepper (whole), black pepper, peas and celery,rosemary and let it boil. Cool and put the meat and leave in the fridge overnight.
Then mix mustard(preferably with seeds) with black and white ground pepper and salt, cover this meat, wrap in foil and place in oven for 90 minutes at a temperature of 200 degrees. Bon appetit.
