From ancient times to the present day buckwheat remains one of the favorite among the people of dishes of Russian national cuisine. Its popularity we have is not accidental. Buckwheat is a healthy dietary product. When growing it does not need any chemicals, it's probably the only cereal that is grown without fertilizers, because of its environmental friendliness, you can be sure. Buckwheat is popular in many Nations, including from Shors - indigenous people of Southern Siberia. Near our city is a picturesque place of Siberia - Mountain Shoria! Indigenous people of this area called Shor. Very original people, preserved to this day their culture and customs. Today I have some muffins, the recipe of which I took a national Shor bread. And of course, made a note of modernity, yet the 21st century

Cooking
Measure out 100 g of buckwheat unground (I have a Mistral), 50 g ground in a coffee grinder into flour, and 50 g boil until tender.
The original need rye flour or a mixture of rye and wheat. But with rye flour and I are not friends at all - tried the oven - well, nothing comes out. Cover the dough with cling film and leave to rise for 1 hour.
Then punch dough down on a floured table, and leave again at 1 hour.
On floured table to press down the dough again and roll into a thick layer (about 2-2,5 cm), cut out round scones
Leave the buns for proofing for 15 minutes and then put in heated to 180 degrees oven, bake until tender
The finished rolls remove from the oven, remove from pan and wrap in a towel to cool a little
Well, my modern note - I propose to do for these buns stuffing! Mix olive oil with grated garlic and this mixture is slightly impregnated cut bun
Rings onions pour over boiling water, not to bitter, a roll, put the slices of tomatoes and rings of onions, sprinkle with herbs
Top with grated cheese and shoots of young peas! Voila! Cover with second half and can bite!
And that crumb structure - it's incredibly fluffy and flavorful!
