Cromesqui
Cromesqui (FR. cromesquis) - dish yuzhnorusskoe cuisine. Prepared from fish, offal or vegetables. Served with soups and broths. Vegetable cromesqui ate even my two year old son that vegetables are not very grievance.

Ingredients

  • Zucchini

    0.25 piece

  • Pepper

    0.5 piece

  • Cauliflower

    3 piece

  • Chicken egg

    1 piece

  • Butter

    20 g

  • Flour

    4 Tbsp

  • Sour cream

    3 Tbsp

  • Olive oil

Cooking

Zucchini, peppers, cauliflower cut into small equal pieces and boil in salted water for about 10 min. with a slotted Spoon remove the vegetables and fry in olive oil until soft.

Roasted vegetables to shift in a bowl and combine with egg and mix well.

To cook the Roux - a mixture of butter and flour. In a saucepan, melt the butter and mix with flour, stirring over low heat.

To the Roux add the sour cream and sauteed vegetables. Cook on low heat with constant stirring until thick (about 5 min). Remove from heat, cover, so as not zavetrilos. Leave to cool. Cooling down, the mixture should harden.

From the resulting hardened mass formed by the balls, cubes, pellets..., dip (flour, nuts, crackers, sesame seeds, etc.). As a breading, I chose the regular flour.

Fry in olive oil on both sides until Golden brown. Served with soup or broth (I have chicken broth).
