Description
Soba is Japanese noodles made of buckwheat flour. Very interesting taste and, of course, useful. I like to add it as a base for salads. This salad just came to my mind tonight. Decided to share with you this wonderful recipe! It was very tasty, hearty and healthy. Preparing for 15 minutes, and the result at 100% will surprise and delight you! Usually soba is sold in the sushi Department. But, if you are unable to find buckwheat noodles, use regular spaghetti.

Cooking
For our salad you will need: soba buckwheat noodles, a jar of red beans, cabbage, tomato, onion, 1 small chili pepper. The dressing is simple: olive oil (forgot to photo), soy sauce, rice vinegar (more mild) and garlic.
First buckwheat noodles (80 grams) break into 3 pieces and boil 10 minutes in water with the addition of soy sauce, olive oil and a little salt. Cooked noodles, rinse with cold water and allow to cool.
While cooking noodles, clean from seeds and cut into small Chile. If you have a very spicy, you can rinse chopped boiling water. Pour into the pan some olive oil and fry a little bit of our pepper.
Onion cut into half rings. Add to chili and fry until slight caramel. With beans drain off water and always wash. Add the beans to the onions and chilli, fry for 3-4 minutes. Then spread on a plate to cool.
Tomato cut into cubes. And Chinese cabbage cut off the top where the leaves are softer, break the leaves with your hands.
Make the dressing. In a Cup, mix 3 teaspoons olive oil, 1 teaspoon rice vinegar 1 teaspoon soy sauce and crush through a press 3 cloves of garlic. Mix well. If you don't have rice vinegar, you can instead use white wine or even a Martini.
Collect our salad. Broken leaves mix with buckwheat noodles, diced tomatoes, beans and dressing. For decoration add a few cherry tomatoes. The sunflower to taste, add freshly ground black pepper and more for beauty a little bit of sesame seeds to sprinkle. Our salad is ready! Enjoy and be happy!
