Ingredients

  • Cream

    300 ml

  • Milk

    200 ml

  • Dark chocolate

    200 g

  • Sugar

This ice cream I always start to do in the evening. Boil the cream. First, mix milk and cream and put on fire, bring to a boil.

Three reception pour the hot milk and cream into the chocolate, stir well each time until smooth.

Beat the yolks with sugar.

To the yolks slowly, stirring constantly, pour a portion (1/3-1/2) chocolate creamy mass. And then it all back in the saucepan with the rest of the cream and carefully mix up. Put on the fire.

Cook without boiling (and it will curdle the yolks). I look at the thermometer - bring to 80-84 degrees. Another indicator, the spoon should remain here this furrow, if you hold your finger. So the cream was boiled. Remove from the heat. Cool.

Cover with film and the night (or at least for a couple of hours) in the refrigerator.

In the morning take out and put into the freezer if you have one. If not, do not worry! Feel free to send the mixture in the freezer every 20-30 minutes to get it and beat with a mixer 4-5 times. I have in the freezer now, that soft froze.
