Pickled prunes
Thanks to the rum and set of spices, prunes acquires a new, unique, rich taste range. Not to say that I'm a big fan of prunes, but for this recipe it is very pleasant to the taste. So prunes can be added in desserts, but also in sauces, salads and stews.

Ingredients

  • Prunes

    500 g

  • Rum

    100 ml

  • Liqueur

    1 Tbsp

  • Orange zest

    15 g

  • Vanilla sugar

    2 pinch

  • Carnation

    1 piece

  • Cinnamon

    1 pinch

  • Nutmeg

    1 pinch

  • Coriander

    1 pinch

  • Water

    500 ml

  • Powdered sugar

    40 g

I did half portions. Mix the rum, orange liqueur and water. Add the powdered sugar, vanilla sugar, orange zest (you can use dried orange peel 4 cm) and spices. Mix thoroughly.

Put on medium heat, bring to a boil. Then reduce the fire and cook under a lid for 10 minutes. Add the washed prunes.

On low heat bring to a boil, cook for 10-15 minutes. I like to completely evaporate the liquid, the prunes, then becomes still and a little caramel.

Allow to cool at room temperature, then refrigerate for 2 hours. Serve cold. If there is not enough sweetness, you can add honey.
