Ham of veal heart with citrus notes
When you make a ham - never again. You can experiment endlessly with seemingly such a simple dish. Try this combination - unexpected and spicy. Citrus notes very light and unobtrusive. About ingredients no one will know. By the way, I never throw away the rind from citrus fruits without removing the peel. So the house always has stocks of dried peel, which can add to quite a variety of dishes as in desserts and pastries and meat dishes, salads, snacks and drinks.

Ingredients. In the photo there is canned garlic. But during the cooking I decided to replace it with peel (wanted). However, it is an occasion to stress again that experimenting with ham endlessly.

To prepare the minced meat, mixing it with salt, pepper, favorite spices, and also added chopped garlic, gelatin and the zest from any citrus fruit.

Cooking ham in well salted water for 3 hours (I used the slow cooker).

Ready the ham (without dismantling vecinita!!!) first, to cool the room to room temperature, and then refrigerate for a few hours. Only after that vecinita can be taken apart and the ham cut with a sharp knife. Serve with mustard. I decorated with parsley and celery and berries currants and raspberries.
