I added the brandy, about a minute before the end of cooking (1 tbsp brandy). The cream should thicken to the consistency of sour cream. Do not try to boil down to a thicker state, it will thicken while chilling. After removing the plate, preferably a minute or two to whip the cream with a mixer (maximum speed).
