Mushrooms in oil-herb marinade
Many may say that pickled mushrooms are sold in any store. What they do at home, go buy. So it is true, but... in store, as for me, lots of vinegar, lots of salt, they are sharp, then generally no. And these, I mean cooked their handles absorb the taste of a good vegetable oil (preferably olive), taste lemon juice (pay attention to the recipe, there's not a drop of vinegar, which is also important), the taste of herbs (and each time you can put in the marinade is different from this and the mushroom flavor will change). Prepare these mushrooms in just a couple of days, and cook them in large chunks also makes no sense. After all, mushrooms are sold in the store all year round.

  • Garlic

  • Lemon

  • Olive oil

Garlic cloves peel and cut in half lengthwise. Lemon (1 piece) pour over boiling water and grate the peel on a small grater. Clean the mushrooms, wash and dry (we do not need water, because we'll throw mushrooms in oil). Mushrooms it is advisable to take smaller. If average, then the cap can be cut in half.

In a saucepan (or frying pan) heat the oil (all 1.5 PT) + salt, garlic, lemon zest, and heat it all, stirring, about 2 minutes.

At this stage, you can try a marinade to flavor and add something to your taste. For example, I added 1tbsp. l of sugar, although in the recipe it is not. Close tightly with a lid and put in the fridge for 2-3 days, stir occasionally right in the container, ie I was turning the container a few times upside down.

Cooked mushrooms store in the refrigerator in this marinade. Prescription to store them no more than 10 days. But I do not so much lie, we've all eaten before.
