Salad with vegetables, spinach and tofu
This lovely, fresh, spring salad is a must for those who want to correct your figure for the summer, as well as for vegetarians and fasting people. In the composition of red cabbage, which perfectly removes toxins from the body, spinach is the leader on the content of vitamins and minerals, tofu is an indispensable source of protein in vegetarian cuisine, for people with lactose intolerance, as well as during Lent.

Ingredients

  • Cucumber

  • Spinach

    1 coup

  • Garlic

    2 tooth

  • Tofu

    150 g

  • Olive oil

    100 ml

  • Lemon juice

    2 Tbsp

  • Salt

  • Black pepper

  • Red onion

  • Cabbage, red,

Cabbage cut into thin strips.

Onions cut thin half-rings.

Tofu wet from water and cut into cubes.

Make the dressing: whisk olive oil with salt, freshly ground pepper, finely grated garlic and lemon juice.

Gently mix in a bowl the vegetables and tofu and pour the dressing. Infuse the salad at least half an hour to absorb flavors and serve. Bon appetit and good spring mood!!!
