Cake of Viennese pastry
This dough recipe can be called a family. As my great-grandmother baked from it, then handed the grandmother, the grandmother to mom and mom to me. In culinary notebook he recorded as "Viennese dough". And bake this dough as cakes and buns, rolls. He was associated for me only with Easter cakes, and some of it was prepared only for Easter. I hope You will like it.

First, remove the flour, you will not need it for a long time. Then divide the whites from the yolks. (I did half portions. Took 5 eggs.) Butter put melted.

Yolks pound with sugar. Whisk the whites to a froth and set aside.

To the yolks with sugar, add milk, sour cream, yeast, salt, vegetable oil, sunflower oil, melted butter and raisins. All mix well. Add whites last and mix well.

Next, take something like towels, put it a pan or bowl with the dough, cover with another towel and leave the dough to ferment for 10-12 hours, stirring occasionally. I usually leave for the night. The picture is already morning photo.

Now get the flour. But the main thing is not to score the dough with flour! 2/3 of the flour safely add on a little bit. It should look like in the photo. Should slightly stick to hands. Then your biggest friend is the sunflower oil. To well lubricate the walls of the cookware. which will be suitable dough, and the hands will be very good to depart.

Cover with a towel. The dough should go twice. You don't have to put in a warm place, it is will be perfectly understood.

Greased with sunflower oil hands distribute the dough on the molds. Molds, if necessary, also grease with sunflower oil. But it is better to use a paper sold, on the eve of Easter everywhere. Fillable forms somewhere in half and leave for half an hour to go. Preheat the oven to 200 degrees.
