Cooking
The half boiled potatoes. Boiled potatoes mash with kartoffelsalat or skip through the press. I triturated through a fine sieve.
The remaining potatoes peel and chop in a blender until smooth or RUB on a small grater. Drain in a fine sieve and squeeze well.
In a bowl, mix the raw and cooked potatoes, flour, butter, egg, baking powder and salt to taste. Mix well.
Heat the pan on medium heat, add a small amount of vegetable oil. Lay out the pancakes on the pan. I did it with hands moistened with water, as the dough is quite thick. Fry on medium heat until Golden brown (about 2-3 min). Carefully turn over and deep fried the other side. Do the same with the other dough.
And though boxty traditionally served without any sauce, I decided to depart from tradition and not the least bit sorry. While frying the pancakes I made them the sauce: mix sour cream, chopped fresh herbs, finely chopped pickled cucumber and a clove of garlic.
Boxty served with sauce and grilled sausages!
Bon appetit and wonderful day!
