Cooking
These are our main ingredients.
4 egg whites beat until firm peaks with a pinch of salt, 100 gr. of sugar and 100 gr. powdered sugar until firm peaks. At the end of the whipping add the zest of 2/3 lemon and 2 tbsp lemon juice.
Beaten egg whites spread on parchment and bake 15 minutes in preheated oven at 150 degrees, then t decrease to 110 degrees and bake another 45 minutes. Leave to cool in the oven.
Here is the base for our dessert. Crisp and flavorful outside, tender flesh on the inside.
Egg geld beat until white with a pinch of salt and 50 grams. sugar. Cream /I 10%/ to heat in a saucepan. without bringing to a boil. Intensively stirring slowly, add the sugar-egg mixture and 2 tbsp of corn starch. Cook the cream on low heat, stirring constantly until thick. Cool, continuing to stir, placing the saucepan in a larger bowl with cold water. Add a few drops of essence /rum I/,1 tsp lemon zest, 1 tbsp lemon juice and 50 gr. soft butter. Beat with a mixer until smooth and refrigerate.
To assemble the dessert, when all its components are completely cooled and just before use, otherwise the bottom will get wet from the cream. The amount of protein calculated on 1 baking sheet. I got 8 pieces.
