Cake
Very tasty cake, my family just love it - the delicate flavor, the cake just melts in your mouth, not cloying, moderately sweet. My medovichok, unlike their fellows of honey oil or custard enough nizkokalorina (250 kcal/100g). The main thing in this recipe is sour cream - from its correct preparation will depend on the quality and appearance of our cake. I must say, the cake is not 5 minutes, not a quick process, but not difficult. Trying to lay out a detailed recipe that would make it easy to repeat!

First, prepare the sour cream for the cream. To do this we need to remove the excess whey, which makes the liquid sour cream. Put all the sour cream in cheesecloth, folded in 3-4 layers. Tie the edges of the cheesecloth and hung our sour cream, we substitute the bottom of the beaker, where will drain the whey. All the action will last about 2 hours. (The resulting serum can be used for pancakes. Serum is good for soaking and softening tough beef or elk. I just pour...)

In the meantime, we will prepare dough for cakes. In a saucepan put the butter and flooding it. Add the sugar and honey. Stir until partial dissolution of sugar. Do not boil!!! Just heated on low heat for 1-2 minutes.

Add soda (not extinguish). Stir. The mass turns white and increases in volume. Stir 1 minute. Remove from the heat.

Beat the egg, mix well with a whisk.

Add all the sifted flour, knead elastic, soft dough. Roll the dough into a ball, put into plastic bag, refrigerate for 30 minutes.

The dough is divided into 6 parts. Preheat the oven to 200 degrees. I bake cakes on a silicone Mat, use parchment, but with the pad faster and easier. The silicone pad a little sprinkle with flour, roll out 1 piece of dough. With a plate (I D=20 cm) cut out the circle. The edges of the dough are not retractable, they are still useful to us. Spread sour cream bowl into a deep glass bowl, add 4 tbsp of sugar. Take a mixer and gently mix our cream beginning on low speed then on high. (I put the bowl in the sink, what would the walls were clean!) Whisk the cream until the sugar is dissolved, 4-5 minutes (stopping and giving rest to the mixer). Long whip is not required, our cream is quite thick and holds its shape.

Collect honey. Cut out parchment or any other paper circle the diameter of our cakes. You can do without it, but with paper it will be easier to shift and serve the cake. On paper lay out the first layer. On top of the cake spread 3-4 tbsp of the sour cream, alignment, retreating from the edges 2 cm.
