Preparing the rye sourdough: day 1: I'm doing this morning, for example, at 9: 00. In a two-liter plastic or glass bowl, mix 100 g rye flour + 100 ml of warm water. Stir well. Get the dough as pancakes. Cover with gauze, top cover with a loose lid, to ferment breathed. A bowl of starter is recommended to put in a warm place, once again not look at it. 2, 3, 4 days: we feed the starter once a day (i.e. every 24 hours after the first day)- added in starter 100 g rye flour + 100 ml of warm water. Mix well. And just cover with gauze and loosely cover with lid. Day 5: today, our leaven is ready and can bake bread. She's still young, and we add some yeast. It looks like our starter
Now for the dough: Mix in a large bowl of rye and wheat flour
Make a well in the flour and pour our rye sourdough
Dissolve yeast in warm water
Add in our dough yeast, salt and seasoning for the bread (didn't have them)
Now stir well the dough, it will be sticky. And knead the dough. In any case, the flour does not add! The finished dough cover with a towel and leave to rest 30 min.
After half an hour, again knead the dough well, like "folding" it to the middle (on the table, sprinkled with rye flour). Hands are also a little "propylite" flour.
Now formable bread (I divided 2 loaves), it's good to roll in flour
Sent into molds, greased with margarine or oil, for the proofing until will increase in 2 times. You can just put directly on the floured sheet. I have the oven warming up for a long time, so I include it at this stage.
Now we have a cool and bread in tins came to almost 2 hours. Put in a preheated 220-250 deg. the oven for 60 minutes. In the bottom of the oven put a bowl of hot water (200 ml)
During baking the oven do not open for 40 minutes!! Readiness check wooden stick. My bread was baked 1 hour 10 minutes Ready to put the bread to cool on the grill, cover with a towel dry.
