Cooking
To prepare this recipe you can take any bean from "Mistral". I used the "Mexico city" black "Mistral". Beans pre-soak in water for 4 hours.
Take smoked ribs, chop them and cut into pieces.
With soaked beans, drain off water, add the cut ribs, about 1 liter of water and put on to cook for 1 hour.
While cooking the beans with ribs, bell pepper and red onion wrap it in foil and put into the oven to bake at 200 degrees for 30 minutes.
At the same time make dressing. Fry one chopped onion in half the specified amount of oil. Add the chopped clove of garlic, finely chopped red chili pepper (to taste), a half-bunch chopped parsley, 1/2 teaspoon of sweet paprika. Mix everything.
Add the chopped tomatoes in their own juice or tomatoes, simmer about 5 minutes.
Cut into cubes baked peppers and onions.
With beans drain off liquid (but do not pour). Add dressing and chopped roasted onions and peppers. Add salt to taste and mix everything.
Take a baking dish or pot and put in it the beans. Add the broth level with the beans. Put in heated to 250 degree oven and bake 30 minutes. Do not install the pot (shape) to the top, leave about 1.5 cm, as the beans will boil and splatter. The beans should slightly boil.
Ready beans allow to stand for 10 minutes.
In the remaining oil fry until smell 2 cloves garlic, sliced on the plate. Turn off the heat and add half a teaspoon of paprika, stir.
Pour the finished beans with oil, garlic and paprika. Sprinkle with finely chopped greens of parsley. Bon appetit! This bean goes well with vegetable salads, rice, potatoes.
