Strudels
This is a delicious and hearty dish of the Crimean Germans were preparing in different ways and my mom, and my grandmother, and my great-grandmother. Here I offer you an option that I often prepare for my family.

Ingredients

  • Turkey

    150 g

  • Potatoes

    4 piece

  • Onion

    3 piece

  • Olive oil

    6 Tbsp

  • Black pepper

    0.25 tsp

  • Salt

    1.5 tsp

  • Flour

    2.5 cup

  • Chicken egg

    1 piece

  • Yogurt

    0.75 cup

One bulb out of three we need to clean. chopped. add salt and pepper, cover and leave overnight in the fridge. From flour, eggs and a pinch of salt and 2 tsp oil and knead kefir loosely non-sticky dough, put it in a bag and leave overnight in the fridge. In the morning we get pending products from them and begin to cook

Divide the dough into 2 parts. One of them roll out on floured surface as thin as possible and brush coat with a thin layer of oil. I use olive oil, my grandmother baked. or ghee mixed with vegetable. The choice of oil depends entirely on your preferences.

Take half of the deferred onion and sprinkle on the dough as I have shown in the photo.

And cut our strudels. They do the same with the second half of our dough and allow the strudel to rest on a floured surface

Now start preparing the sauce. I use a cast iron frying pan diameter 26 cm and Its volume is just enough for my number of products. On the bottom of the pan pour 3 tbsp oil and put on medium heat

Turkey fillet cut into pieces of approximately 1,5x1,5 cm., potatoes - the same pieces, and cut onion into chetvertfinalny. In hot oil put the meat and fry over medium heat until lightly Browning. Add the onions and fry for another 2-3 minutes.

Put in a pan the potatoes, salt, pepper, stir and flatten the layer.

Put our strudels together with flour, on which they lay, pour boiling water to the middle level of the dough, cover and put on high heat

When from under the covers and hear a strong gurgling, reduce the heat to a quiet simmer and strudels 1-1. 5 hours without lifting the lid. Today I cooked them 1 hour 15 minutes. The finished strudel to stand under cover for 5 minutes and then remove them to a dish so that the pieces of dough was under the sauce. Bon appetit!!!
