Spicy rice salad
Quick, hearty, budget-friendly and delicious salad. Can act as a side dish with fish or chicken. For me is a complete, self-sufficient dish. Perfect for those who value their time.

Ingredients

  • Pine nuts

    25 g

  • Red onion

  • Vinegar

    25 ml

  • Lemon juice

    15 ml

  • Olive oil

    40 ml

  • Raisins

    10 g

  • Salt

  • Black pepper

  • Parsley

Cooking

Boil the rice until tender, as recommended on the package. I have a mix of parboiled long grain with wild rice (Aquatica mix "Mistral"), boil it 35minutes.

Slice the red onion

Combine the vinegar and lemon juice, then add the onions. Let stand for several minutes.

Fry the pine nuts in the pan to such a degree as you like.

Now combine all the ingredients in a large bowl, add dressing with onions, add olive oil. Mix well.
