Cookies with lemon jam
Crumbly, tender shortbread. Accentuates the sweet taste of biscuits, sweet-sour, fragrant lemon jam. Full pleasure and taste, and color. I often use meringue confectionery. Egg whites undergo heat treatment, non-greasy, enjoy eating children.

Ingredients

  • Butter

    150 g

  • Sugar

    150 g

  • Yolk egg

    4 piece

  • Flour

  • Leavening agent

    1 tsp

  • Vanilla sugar

    1 tsp

  • Egg white

    2 piece

  • Sugar

    120 g

  • Vanilla sugar

    1 tsp

  • Citric acid

    0.17 tsp

  • Jam

    200 g

  • Topping pastry

Connect the flour with the baking powder TM Dr. Oetker, mix with a whisk and sift.

Beat at medium speed of a mixer soft butter with sugar and vanilla sugar TM Dr.Oetker, until whitening of the mass, two and a half minutes.

Add to the oil weight all yolks, stir with a spatula or spoon.

Add the flour with the baking powder TM Dr.Oetker. First mix with a spoon, then put on the table and quickly knead a soft dough not stick to hands. The flour at the end to adjust, leave some for the mixing Desk. Look at the pictures, I specially the middle shows what should be the dough. Much to score flour it is not necessary to dry the cookies.

Roll out the dough on baking paper the size of baking sheet, flour spiked when rolling out. The thickness of the dough not more than 0.8 mm. It rises well in the oven. Bake at 180° for 15 minutes. Here Browns bottom, top remains the same light.

Then take the paper and cut out cookies of any geometrical shape. How you see the cookies or what is acute form for cutting dough.

Cookies must cool completely on a wire rack. I got 20 cookies.

To prepare the meringue. On the stove put a pot of water, allow it to boil. Meanwhile, mix all the ingredients for the meringue and beat for 2 minutes on the table, on small speed of the mixer. Transfer the meringue in a water bath, whisk at medium speed for 2 minutes, and then move on high speed of mixer and beat for another 4 minutes. To remove the table and beat another 4 minutes. Mass is dense, holds its shape well. Allow to cool for 10-15 minutes and proceed to the decoration.

Fill piping bag and meringue to make at the edge of the pastry border. Inside the cookies to fill with jam, decorate with sprinkles TM Dr. Oetker
