Cooking
For this cake we will need a split form with a diameter of 18 cm. For a start, mix all the dry ingredients: flour (sifted), sugar, salt, vanilla sugar, cocoa powder (sift).
Then the liquid:eggs, milk (add gradually).
The dry ingredients to pour the liquid, add the vegetable oil odourless, whisk and strain through a sieve. Cover with cling film and leave for 20 minutes.
Pears to pan, remove seeds, cut into 4 pieces, if the skin is thick - cut. Put in a saucepan, pour sugar, pour water. Cook on low temperature for about 10 minutes (juicy pear 5 minutes).
Ready pears, leave to cool, drain the syrup (makes about 100ml.), we need it for the cream with agar-agar.
Prepare the custard. Put the milk on the stove. Beat the sugar, egg, vanilla sugar.
Add starch, mix thoroughly, strain. Milk has not yet had time to boil and quickly pour a small portion into the egg-starch-the-sea arnow mixture. Again mix thoroughly with a whisk and pour in the remaining milk. Cook continuously (!) stirring until lightly thickened. Approximately 3 minutes.
Cover right next to the cream with cling film to not form a crust and the cream is not cooled ahead of time (we need it warm).
For the first pancake slightly grease the pan with oil, then you do not need. Fry each pancake ~ 20-30 seconds on one side and ~ 5-10 seconds on the other. Turn it over gently!
The cooled pears cut into another 4 pieces.
Kiwi cut into circles and half.
Whip the cream until soft peaks form. Set aside.
Prepare the cream with agar-agar. Pour the milk into a saucepan, the syrup from cooking the pears, sugar.
Stirring constantly, bring to a boil. Add the agar-agar, mix thoroughly. Cook 2 minutes, continuing to stir with a whisk.
Cream with agar-agar portions added to the custard. Whisk or with a mixer. We must act very quickly, because agar agar sets faster than gelatin. The resulting mixture was added by portions into the whipped cream. Whisk.
Stacked chocolate chip pancakes overlapping each other so that a portion hung from the sides of the form (5 pancakes), put one in the middle. Try to keep between the pancakes there are no gaps.
Spread 1/3 of cream on top of fruits and berries.
Take a pancake, in the middle put a tablespoon of cream, it is fruits, berries. The formed pouch and gently push into cream. (I made a mistake, taking the form of larger size in the middle also needs to be pancake pouch fruit, as I had to rush out, leave it as it is. To finish the cake already deep in the night, again made pancakes and cooked cream.) Spread on top of kiwi, raspberries and pears, they are remaining cream. Overhanging edges of the pancakes to wrap it up, put the pancake in the middle.
To remove the cake in the fridge for 2 hours, preferably overnight. Decorate as desired. I have a plan for the decoration of the cake came out, as my husband ate the kiwi and the remaining pears, raspberries managed to save.
