Blueberry pie
Extremely tasty pie, without a grain of exaggeration! Soft and delicate cake, juicy, slightly moist, with a light, airy and lush. Recipe from the book Jamie Oliver's "My Italy".

In the original version of this pie is made with grapes fragola. (dark, small, very sweet) But the Jamie Oliver couldn't find this grape in the UK (as you know, and my searches also proved futile...) and offered an alternative: replace the grapes to blueberries. Quote from the book: "This cake is similar to the one (the original)... and the taste of it all right." And I went even further: making a pie with blueberries, cherries, black currants and cranberries. To sum up: the first option, with blueberries seemed to be the most successful.

Everything happens very quickly, so it is necessary to turn on the oven to preheat, 180°. Beat eggs with sugar white.

Still whisking, pour the milk, olive oil, add the softened butter and mix just a minute. Possible substitute olive oil for sunflower oil refined, good quality. Pour the sifted with the baking powder and salt to the flour, mix the dough until smooth. The consistency - thick cream: it falls from the blades, but not pouring from it.

Add to the dough orange and lemon zest, stir with a spatula. At this stage, Mr. Oliver advised to leave the dough for 10 minutes - not going to argue with the chief.

Blueberries (if frozen, of course) to fully defrost is not necessary, it is sufficient that the berries were not crushed ice. About a quarter of the total number of berries gently stir in the dough.

The bottom of the form for baking (diameter 20 cm) lay parchment, brush with olive oil. Put the dough in shape, smooth. Bake in preheated to 180° oven for 15 minutes.

Then remove the pan from the oven, spread the cake with the remaining blueberries and gently press them into a pie.

Put the pie in the oven for another 30-35 minutes and bake until it will turn brown. The readiness of the product to check wooden skewer. Cool pie for about 10-15 minutes in pie form.

Then remove it from the form and cool completely. Before serving you can sprinkle the cake with powdered sugar. You're done! If you decide to bake this pie with cranberries or black currants, the amount of sugar should be increased to 15-20 g If there is a desire to cook pie with cherries - berries should be thawed completely and cut in half.
