Cooking

step-0
And so it continued... and it all started that long process of cooking pudding, buy special moulds ))) but it was worth it! Required products... I hope you left 250 grams of pudding ))) let me remind you the recipe http://www.povarenok.ru/recipes/show/54768/
step-1
Prepare molds! Aaaahhaa them..I have another story)), then tell me. Coat them with oil and sprinkle with sugar! You can use brown sugar.
step-2
Now pour the milk into a saucepan and bring almost to a boil.
step-3
RUB the yolks with sugar, then add the flour and corn flour. Mix well and pour the hot milk!
step-4
The resulting mixture back into the saucepan. Interfere with 2 minutes on low heat and add the zest of one orange! Pour the batter into a deep bowl and leave to cool.
step-5
Let us proteins! Even the beaten egg whites called meringue! Begin to whisk the egg whites, add lemon juice and almost at the end sugar. Carefully whisk until peaks!
step-6
Go back to the dough! Take out the pudding and crumble it into the batter. Mix well so that the mass was homogeneous!
step-7
Now 1/3 of whipped egg whites mixed with the bulk! To do it very carefully shifting movements...not to break the air structure of proteins. Then the remaining whites and mix well.
step-8
So in the end! Arrange in molds, and 2 important points: the remnants to scrape with a knife, a finger and walk around the ramekins so the soufflé easily raised! The method of Ramsay ;-) put them in a preheated oven at 190* for about 12-15 mins Soufflé to rise, the center slightly concave and Golden color.... inside they stay wet, liquid...
