Cut eggplant into thin slices (about 5-7 mm). If desired they can be sprinkled with salt and put in colander for 15-20 minutes (this is done to remove excess bitterness). Then drain the liquid, rinse with cold water and blot the eggplant slices with paper towel. I often miss this point.

While fried eggplant, you can start making spaghetti sauce. To do this in the frying pan 2 tbsp olive oil and squeeze through garlic press. Fry for about a minute, until the garlic is in any case not burnt!
Add pureed tomatoes, salt, pepper, dry Basil, oregano (or Italian herbs mix) and sauté the sauce for 10-15 minutes.
