Cooking

step-0
Mix brown sugar TM Mistral with flour and salt.
step-1
Chilled butter cut into small cubes and mix with the sugar-flour mixture.
step-2
Add the egg yolk and quickly knead the dough.
step-3
I have the dough crumbled and was not going to the ball, so I added a couple of tablespoons of very cold water.
step-4
The finished dough wrap in plastic wrap and refrigerate for 30-40 minutes.
step-5
Preheat the oven t 180-190 degrees. Chilled dough roll out thinly between two sheets of parchment. Spread the batter in the form ( 26 cm diameter) with baking paper. Moulded bumpers. Cover with the dough with a sheet of baking paper and pour dry beans ( rice or beans). Bake the pastry blind for 20 minutes, then remove the load, together with the paper and continue to bake the basis for another 5 minutes until lightly Browning.
step-6
Remove the base from the oven and let cool in form at room t, while preparing the filling. For the filling, remove the currants from the stems, rinse your will and put on a sieve (or paper towel). Several whole sprigs of leave for decoration.
step-7
For the cream of the yolks: in a small saucepan the milk with vanilla bring to a boil. Separately in a saucepan the egg yolk RUB with 100 grams of sugar. To the sugar-yolk mixture gradually beat in cornstarch.
step-8
In a saucepan pour in the egg yolks to the hot milk. Put the saucepan on a low heat (or in a water bath) and stirring constantly, bring the cream until thick. DO NOT BOIL!!! Let the cream cool to warm.
step-9
Into the cooled cream will smeshaem red currants. Separately whisk the whites in the stable foam, gradually powdering 150 grams of sugar. The remaining 20 grams of sugar I left for decoration. Also, before whisking egg whites, I put a couple of tablespoons newsbites egg whites. For what? I'll tell you later.
step-10
If the oven is already off, then again heat it to 180 degrees. On a sand-based spread the cooled cream from egg yolks, red currants.
step-11
Top gently spread butanol mass.
step-12
Put the pie in the preheated oven for 20 minutes or until Browning proteins.
step-13
Ready give the cake to fully cool in pan and then place on a dish for serving. For decoration I have a few whole sprigs of currants dipped first in the delayed newsbay protein, and then in the delayed sugar. The resulting candied sprigs of currants I decorated the finished cake.
