Sometimes it's hard to choose what I want pancakes, and then comes to the rescue pancake roll with three fillings! Here and delicate cheese with a lemon note and a light strawberry more year with reserves, and fried banana for brightness and aroma. With toppings you can experiment, use other berries, poppy seeds, fruit, anything that you find tasty and, most importantly, balanced. These pancakes are perfect for the holiday table at the carnival and will surprise your guests.

Cooking
Cook thin pancakes according to any recipe. I suggest the following: whisk egg with 1 tablespoon of sugar.
Add flour and milk. Whisk until smooth with no lumps. Should get a watery consistency, if necessary add more milk. Lightly salt the dough. Fry the pancakes on a pancake pan with a thick bottom. For cooking use vegetable oil, in my case, TM Oleina.
Prepare the toppings. First, combine the cottage cheese, sour cream, 1.5 tsp. vanilla sugar and lemon zest.
For the second filling, sprinkle the defrosted strawberries 1, 5 teaspoon of vanilla sugar and let them soak. For the third filling cut bananas in cubes and fry in vegetable oil until light it will turn brown.
For ease of twisting of the pancakes use a special Mat for sushi and rolls. On the Mat lay baking paper, not to dirty. Put on top of one pancake and cut a little from one end so it was smooth. Put the first filling on this edge.
The same is done with the second...
... and the third filling.
Put two pancakes overlapping, cut one edge. Put three rolls with toppings on the edge. Gently roll.
Ready roll cut into 4 small rolls.
