Pike in the salt
Found here on the website from chef Brat recipe perch in salt and I remembered how we in the country did in the summer fish... Decided to share my recipe come, see and rate my dish.

Ingredients

  • Fish

    1 piece

  • Salt

    1 kg

  • Lemon

    1 piece

  • Chicken egg

    1 piece

  • Spices

    2 Tbsp

  • Parsley

    3 piece

  • Water

    100 ml

Fish wash. Cleaned of scales is not necessary!!! The belly cut and remove the insides. To put parsley and a lemon wedge. On top RUB the fish with spices to taste.

Now preparing salt. A kilogram of salt pour into a deep plate. The egg. Add the zest and lemon juice. And here to throw spices. Then it all carefully mix and adding a bit of water, what would the salt was very wet, but the water did not flow.

On a baking sheet lay out a piece of salt on top of the fish, and close again with salt. Wet salt, wet snow holds its shape well.

In a hot (200-220°). the oven for 40 minutes. Take out the fish already seared. And with a hard shell. cover with a towel (so all over the kitchen not flying grains of salt) and short blows of a knife split the shell.

Remove the skin. Gently pull out the flesh... and it's so soft and juicy, fragrant and delicious it turned out... mmmmmm... delicious!
