Ice cream with salty caramel
Creamy ice cream with rich flavor of caramel and salty notes of caramel ice cream give even more unique and inviting taste.

Ingredients

  • Yolk egg

    6 piece

  • Brown sugar

    220 g

  • Cream

    840 ml

  • Vanilla

    2 tsp

  • Salt

    1 tsp

Prepare the caramel: 1. heat sugar in a pan with a thick bottom on a medium fire, stirring occasionally with a wooden spatula until it starts to melt. As soon as the sugar begins to melt, a couple of times to shake the pan until the caramel will be dark amber in colour.

2. Add warm cream and stir gently with a wooden spatula. Be careful, the mixture will start bubbling very much and this time it's easy to get burned! Heat until caramel is completely dissolved in cream. Remove from heat, add salt and cool.

3. Connect the cream and half of sugar, stir. Pour the mixture into the saucepan and put on medium heat. Once the mixture begins to boil, immediately remove from heat.

4. Whisk the egg yolks with the remaining half of sugar and vanilla.

5. Connect the yolk mixture with hot cream 3-4 time. Place on medium heat and boil for a few minutes. Don't forget to stir constantly! All this time, do not forget that your basis in any case should not boil! (if you have a cooking thermometer, the temperature of ready mix 85).

6. Strain your mixture through a sieve.

7. Mix with salty caramel and cool. Further, if you freeze in the freezer, put the base in the container and from time to time take out and stir, if you have an ice cream maker, simply follow the manufacturer's instructions.
