Pear-raspberry dessert

First you need to prepare the fruit. Pear peel, remove core and cut into small cubes. Pears put into a frying pan, add the 1st. L. sugar, 1 tbsp water, mix well and fry on medium heat until soft. Cool.

Then the pears add the raspberries, lemon juice and beat with a blender into a puree.

Separate the whites from the yolks. In a small pot to combine the egg yolks, 1.5 tbsp sugar, flour, starch, and carefully whisk.

Milk to combine the cream, bring to a boil and turn off. To the yolk mass add 2 tablespoons of the milk with cream and whisk. Then add the remaining milk with the cream, still whisking. Then put on a slow fire, to warm up before thickened (stirring constantly with a whisk) and turn off the heat.

Beat the whites with the remaining sugar (2,5 tbsp) in a lush resistant foam. Two tablespoons of whipped egg whites and a pear-raspberry puree to add to infused cream and whisk. Then add the remaining whipped whites and gently with a spatula (or spoon) to mix from the bottom up.

Molds for baking to coat with butter and sprinkle with sugar. Mass to distribute the forms before the half, knocking on the table with molds, so that the mass settled to the bottom and then fill molds to the top.
