Walnut-ginger candy red lentils
I love experimenting in the kitchen. This time I wanted sweet, but unusual! Eyes fell on the red lentils, and why not?.. I must say, I liked the result. Candy is not sugary, soft, to teeth and hands don't stick. The taste is rich, milky and creamy. This recipe is dedicated to cooks - Victoria (victoria ms) and Nadya (Padamadan ).

Ingredients

  • Lentils

    100 g

  • Dry milk

    150 g

  • Brown sugar

    350 g

  • Butter

    1 Tbsp

  • Corn starch

    2 Tbsp

  • Vanilla

  • Walnuts

    0.5 cup

  • Candied

    5 slice

  • Water

    250 ml

I like this variety of lentil, such a happy color, is brewed very quickly, the taste of sweet. And in my opinion, it is the most delicious among others. Lentils, rinse and boil according to the instructions: 10 minutes after boiling on low heat. Drain, if there is liquid, I didn't have it. Lentil mash into a puree, aim to achieve perfect consistency is not necessary.

Ginger cut into small pieces. Sugar grind in a coffee grinder into powder. You can take the ready.

To mashed potatoes add sugar powder, dry milk, corn starch and oil. Stir and put on the stove. I recommend to use a flame spreader. Boil the mass until thick, stirring constantly, for approximately 30 minutes. Color change to darker, brownish as condensed milk. Check for freezing: scoops up a bit viscous mass with a teaspoon and leave for a minute ( you can put in the fridge). If the mass quickly solidifies, add the cut ginger cubes ( big left ornaments), cooking stop.

The mass is allowed to cool for about 5-8 minutes, then a teaspoon of detachable small pieces, quickly shape ( CAUTION! Weight pretty hot! ) and immediately press a piece of candied ginger. At first I tried to make candy without butter, but the mass hardens very quickly, even with a small and cooling is very difficult to shape a hot piece. So I decided when re-heating add butter. Tried both. Bright candy - without oil, dark oil, they are softer.

There is a third, it in the candy mass added chopped walnuts, pre-toasted on a dry pan. This mass is put in the silicon container, and when it has cooled, cut it into rectangles. All the candy was placed in the refrigerator to harden for 1 hour.
