Cooking
The flesh is lean pork (stew) cut into small cubes (2 x 2 cm) pieces. Finely chop the peeled ginger root. Mix it with the meat.
Finely chop the onion and garlic.
Mix onions and garlic with 2 tablespoons soy sauce, ground cumin, coriander (can - cumin), lemon juice and chutney... spicy Sambal Olek - Sambal oelek (number of chutneys can be increased to 1.5 tsp). Chutney Sambal oelek is made from chili peppers. For those who love spicy very hot and I quote "folk" recipe: 200g chili peppers cut into slices (no seeds), add 250 ml of boiling water, cook on a low heat for 15 min under a lid. Blend with a mixer, adding 1 tsp. of salt and sugar and 1 tbsp oil and vinegar. Store in a glass jar in the refrigerator.
Mix the meat with the marinade. Cover and leave overnight in the fridge. I left for 6 hours.
In hour H. the Oven to put on heating. Cut into rings leek (the white part of a stalk)
Further, instead of the sweet soy sauce Kecap Manis, I made a variation: 4 tbsp soy sauce + 1 tbsp honey (acacia).
In a well heated pan in 2 tbsp oil, fry the marinated meat until it will turn brown, pressed from the marinade (marinade and spices - save!)
In the end, add onion and fry a bit all together.
Put fried onions with meat in a ceramic baking dish or cast iron pot (with lid), add the marinade from the meat, pour approx. 150 ml of water.
Mix well. Cover the pot with a lid and simmer in a preheated 200*C oven for 40-50 min.
