On the eve of Easter I offer a variant of a cheesecake with prunes. A in addition to cakes for Easter cooking and Easter cottage cheese, some cooked in the usual way (under the press), others baked, is obtained in principle a good cheesecake with your favorite nuts, candies, raisins. The composition of the cheesecake include cream cheese Mascarpone and prunes, I thought why not and at Easter to cook the cheesecake?! That's why share a great recipe, in my opinion, cheesecake. Cooking
Prunes soaked in rum (I have cognac) for a few hours at night (optional).
For sand foundations: - grind into crumbs using a blender chocolate chip cookies (I had Oreo) - melt the butter - mix crumbs with butter form (I 26 cm) with baking paper - spread the mixture in a form, even out with a spoon tightly wrap the form in several layers of foil - remove the form with sand on the basis of in the refrigerator
Prepare the plums: - postpone a handful of prunes (about 100 grams) to the side, pressing his remaining prunes along with the cognac, bring to a boil, adding about 3-5 tablespoons of water. In the throes of prunes until soft, 5-7 minutes - remove from heat, let cool, then using a blender grind the prunes into a puree.
Cheesecake layer: beat eggs with sugar, add vanilla, cinnamon, and starch (I forgot about it, sorry, but better to add, the form will hold up better) in the resulting mixture add the mascarpone cheese, whisk everything well - at the end of the cream and whisk all thoroughly

I decided to cover the top of the ganache mixture of milk and dark chocolate. And already to decorate with ganache white. For ganache, white chocolate bring to a boil (but not boil) 50 ml cream and pour 100 grams of broken chocolate. Allow to stand for 2 minutes, carefully mix before reception of homogeneous mass and add 10 g of butter, mix again all. Let cool, cover with cling film and put in the fridge overnight. For the ganache, mix the milk and chocolate repeat the same steps, only cream we have 300 ml and 100 g milk chocolate 200 g of bitter. Let cool and fill the top of the cheese, I didn't use all the ganache, the third part I have left. Send a cheesecake in the fridge to harden the ganache.
